Peanut Butter Cookies (so easy it’s shocking)
I met my husband on 4th of July weekend in 1998. We started dating pretty immediately, and I have been making these cookies for his October hunting trips ever since. They’re yummy, they’re a staple of the season, and they make everyone smile. Every year, the guys get the obligatory and prideful photos, of 4 dozen cookies; ready for their trip.
My recipe isn’t a secret, and when I tell people where the recipe is from they usually don’t believe it at first. When my hubby and I first met and started dating, we literally just hung out. We got our seasonal and most of the time boring coffee orders and walked around the mall. One time, we both eyeballed the biggest peanut butter cookie either of us had ever seen. We shared that cookie and it was awesome.
Then a few months later, when I learned about said October hunting, I knew I was going to make these cookies. Something for him to remember me by. Ahhh swoon, right? Lol. I made cookies for my boyfriend and now, 27+ years later, I still make these cookies every October. 4 dozen cookies, another plastic container that I had to buy again cuz the one from last year….? Lost again.

A few tips and tricks for them to turn out just right:
1. Unwrap all of the mini pb cups add them to a bowl and stick that bowl in the freezer. Frozen PB cups will hold their shape better than room temp ones. And unwrapping them all first is important. It takes a lot of time to unwrap 4 dozen mini peanut butter cups.
2. Always use room temp ingredients. They mis together better, and there will be less uneven baking due to cold ingredients and other stuff that a culinary school will teach you.
3. Make enough time in your schedule for a long cooling time. The frozen cups will solidify again once the cookies are completely cool.
